A Canadian sparkling made with the Methode Classique, which is the same way that champagne is made, but this time it’s in Nova Scotia using the expected grape varieties of Chardonnay and Pinot Noir but also the Canadian hybrid variety L’Arcadie which was bred to cope with cold Canadian winters. It looks and smells like a sparkling wine with classic crusty white bread aromas but it has an added perfume and a greeness of snapped stem. The flavour is sharp and yeasty and is okay but not top of the league – it’s rather like English sparkling tasted about 10 years ago. But English wine has moved on and improved, let’s hope Canadian sparkling wines will too.
